I get so easily bored of lunches so when Vicky from Fun and Fit Exercise Classes suggested a Chicken, Chickpea and Watercress Salad with a Lime dressing, I thought it was a great way to add a bit more excitement to lunch.
Vicky tells me "This is low in bad fats; olive oil & Avocado's have good fats which help promote fat loss. You need to eat the right fats to lose fat. Low in sugars & simple carbohydrates. It's full of nutrients and has the right carbs for energy"
What you need -
Pepper (use colour of choice)
2 cloves of garlic
This is so easy to prepare just chop everything up to a size that suits your taste and add some chicken or a meat substitute.
To make the Lime & Garlic Dressing
Put 3 table spoons of Olive Oil into a bowl, mince 2 cloves of Garlic and add to olive oil, then add 3 tablespoons of Lime Juice and a pinch of pepper.
Whisk all the ingredients together and serve over the salad.
